Meet Kat Glaudini-Berroa, Our Assistant General Manager

We couldn’t be prouder of our incredible staff. So we figured we’d share them and a few of their stories with all of you here in our blog, starting with one of our greatest assets: Meet Kat Glaudini-Berroa, Assistant General Manager of Deluca Pasta...

Kat was born in Los Angeles, but moved to New York at thirteen. She lived there until coming back west to El Segundo two years ago. Before moving back, she worked at NYC’s Public Theater, where Hamilton enjoyed its off-Broadway run. Kat was actually the house manager for the phenom show before it moved to Broadway.

Kat met Operations Manager Jen Goaring when Jen invited her to a “Girls Night” that she periodically hosts at her house in El Segundo. A few months later, Jen was taking over operations at Deluca Pasta. She needed an assistant manager. Kat had managerial experience. It was the perfect match. Jen says “I hired (Kat) because she’s very organized, has a ton of customer service experience, and takes no crap.”

Kat feels that a big key to being a successful restaurant manager is “Not feeling like any job is beneath you… You have to be willing to do the grunt work.” She loves the “family atmosphere” of Deluca’s staff and the fact that the restaurant is a real “community support project” – i.e. coffee, bread, beer, desserts, marketing, art design are all provided by El Segundo vendors.

Calling upon her days in the theater, Kat thinks the biggest skill that translates from that industry to working at a restaurant is “the ability to problem solve.” If there was a problem during a performance, she had to learn to solve it “without allowing it to disrupt anyone else’s experience… the show must go on.”

Her favorite type of night at Deluca is “Having a full restaurant where everybody is enjoying themselves, having a good time, and everything is running well – whether it’s the kitchen, front of house… (it’s) people enjoying their meals.”

Kat has been married to her husband, Cesar, for nine years and they have a seven-year-old son, Julian. She’s a huge Disney fan with Disneyland being one of her favorite places to visit. She loves to read, listen to podcasts about “all things true crime,” and counts reality TV as among her biggest guilty pleasures. She is currently “impatiently waiting” for the return of HBO’s Game of Thrones
