At Deluca Pasta, we pride ourselves on pulling together the most interesting, freshest, seasonal ingredients that we source locally, right here in California. One of our favorite partners who help us to achieve this every day is LA Specialty, who works with us to source the highest quality produce and finely curated artisan ingredients around.
The man to bring it all together is Saul Slotnick, our favorite account representative from LA Specialty. We sat down with Saul to learn a bit more about his business and what makes him tick. Here’s what he had to say…
What do you love about your job?
Saul: Simply put, I love food and I love other people that love food. So, every day I get to surround myself with the best produce and specialty food items in the country (and in some cases the world!) and share the knowledge I have learned and the love that I have with amazing chefs right here in Los Angeles. Keeping up with the changing food seasons, flavors, and cultures that are represented in Los Angeles has been one of the most fulfilling challenges of my career. LA is one of the greatest food cities in America right now, and we are at the forefront of that scene.
How does your company work with the farmers specifically and how do you find the farms from which you source your products?
Saul: Our produce comes from as close as possible and as far as necessary. We believe a local, sustainable food system is socially and environmentally responsible, helps maintain unique, regional varieties, and is vital to a strong local economy. Most importantly, local peak of season fruits and vegetables are the ripest, freshest, and most flavorful to eat! We have a strong community of local growers that we work with to supply the best of what is available in CA seasonally. We can work on programs that focus on categories of products or on geographical regions.
What are some of the more unusual produce items that you discover and do you have a favorite season when it comes to produce?
Saul: Some of the more unusual items that I discover are actually not unusual at all to many cultures, but are just lesser known to the masses. Items like jackfruit, mangosteen, cherimoya, etc. have been around for ages but are just now gaining popularity and they are delicious! In addition, hybrid items that combine the best of different varieties are always fun - things like Caulilini (cauliflower/broccolini hybrid), Lollipop Kale sprouts (kale/brussel sprout hybrid) and Pluots (plum/apricot hybrid) are a few that come to mind!
How often do you deliver to Deluca?
Saul: We deliver to Deluca Pasta pretty much every day, supplying them with the freshest seasonal produce for their menu. In addition, Deluca leverages our fantastic specialty offerings such as canned tomatoes from Stanislaus, olive oil from Corto, cheese from DiStefano and Bellweather, flour, and much, much more. They take the best ingredients available to them and prepare them with love and respect to offer their customers classic Italian cuisine with a California flare. We love working with Deluca and it’s been great to watch their journey unfold.
